Paneer Makhani Pizza

Anyone who has ever been to Mumbai knows it is a melting pot of cuisines. Dishes are created mostly by fusing multiple food items into one. The Paneer Makhani Pizza is one such dish, combining the crustiness of a pizza with the flavorful Paneer Makhani gravy. Growing up as a 90's kid, pizza was a rare commodity and so it is not surprising that I grew up to become a pizza monster, trying out any and every pizza place I could find. After binging on pizzas for a decade, I had finally found my favorite one. The Paneer Makhani Pizza at a local joint called Joey's Pizza. Oh boy, just thinking about it would make me feel all nice and warm and happy. This quarantine, stuck at home and longing THAT pizza, I decided to try and recreate it. The results were so good, I think I wont ever have to go back and wait in those long queues for this yummy pizza again. I kid you not, we ate these pizzas for dinner two days in a row!

Though it requires quite a few spices, this recipe is easy and methodical. I baked the bread from scratch too, but if you're short on time, just pick up the bread from a store and start with the makhani sauce and paneer topping. This dish is great for both, the traditional tomato, onion, cheese pizza lovers as well as the adventurous ones craving something new on their pizza.

Paneer Makhani Pizza

Ingredients for Makhani Sauce:  
  • 1 tbsp Oil
  • 1 tsp Cumin seeds
  • 4 cloves Garlic
  • 1 tbsp Ginger paste
  • 2 Green Chillies
  • 4 Whole Red Kashmiri Chillies
  • 1 tbsp Butter + 1 tsp Oil
  • 1 large sliced Onion
  • 4 large diced tomatoes
  • 7 Cashew pieces
  • Salt as needed
  • 250 ml of Water
  • 1 tbsp Red Chilli powder
  • 1 tbsp Coriander powder
  • 1 tbsp Sugar
  • 1 tsp Garam Masala
  • 1 tsp Kasuri Methi
  • 4 tsp Fresh Cream
  • 2 tbsp Fresh Coriander
Ingredients for Paneer Tikka Topping:
  • 1 tbsp Butter 
  • 1 tbsp Oil
  • 1 tbsp Ginger Garlic paste
  • 1 tsp Coriander powder
  • 1 tsp Cumin powder
  • 1 tbsp Garam Masala
  • 1 tsp Amchur powder
  • 1 tbsp Kasuri Methi
  • 200 grams Paneer cubes
  • 1 tsp salt
  • 1/2 tsp Black Salt
  • 2 tbsp Fresh Cream
  • 2 tbsp Coriander leaves
Ingredients for Pizza Dough:
  • 1/2 cup warm Water
  • 1 tbsp Sugar
  • 1 tsp dry yeast
  • 2 cups Refined flour
  • 2 tsp +2 tsp Olive Oil
  • 1/2 tsp Salt

Recipe for Makhani Sauce:
  • Heat oil add cumin seeds in a pan and let them splutter. Then add all the ingredients and cook for 5 minutes.
  • Add water, cover and cook further for around 10 minutes
  • Let the mixture cool down to room temperature and grind into a fine paste
  • Heat butter and oil in another pan, add red chilly powder and coriander powder and sauté for a minute
  • Add the grounded Makhani gravy and cook it for 5 minutes
  • Add sugar, salt to taste, garam masala, kasuri methi and fresh cream and cook for another 2 minutes
  • Add freshly chopped coriander leaves and allow it to cool down to room temperature

Recipe for Paneer Tikka Topping:
  • Heat oil and butter in a pan and add ginger garlic paste, sauté for 2 minutes 
  • Add the fresh cream and stir and cook for 2-3 minutes
  • Add powdered spices and sauté it for 1/2 minute 
  • Add the paneer cubes and salt and coat them well with the masala 
  • Add freshly chopped coriander leaves and mix well. 
    Recipe for Pizza Dough:
    • In a large bowl, mix ½ cup warm water, 1 tsp sugar and 1 tsp dry yeast
    • Let it rest to allow yeast to activate till it froths
    • Next add 2 cups of AP flour, 2 tbsp olive oil and 1/2 tsp salt and combine all the ingredients well
    • Add more water as required and knead to a smooth and soft dough
    • Tuck the dough and form a ball
    • Place this ball in a well greased mixing bowl with olive oil to prevent dough from sticking to the bowl
    • Now cover the bowl tightly with a plastic wrap and let it rest for about 2 hours
    Pizza Assembly:
    • Roll the pizza dough into a flat round shape and puncture it with fork tips
    • Spread a layer of the Makhani Sauce on the pizza and garnish with the paneer topping and loads of cheese
    • Next bake it in a preheated oven, or on a covered pan on your stove for 8-10 min or until the cheese melts

    Chef Tip: We added diced red and green bell peppers, onions, shredded mozzarella cheese and some oregano seasoning to our pizza toppings.
