Sinfully Rich Dark Chocolate Cake

Imagine this:

2. It's your husbands 30th birthday, his first since you've been married, 
3. Everyone you know has baked a cake for someone during this quarantine
4. Your husband is already a great patisserie and........
5. You're someone who wishes you had rather forgotten all your earlier baking attempt failures! 

You guessed it, the pressure is HUGE!

So this time, putting on my big girl pants, I decided to go old school and make the cake from scratch instead of succumbing to the usual instant packet mixes. And after loads of patience and motivation, voila, we had a winner! It is a coffee flavored dark chocolate molten cake with chocolate buttercream frosting. I know it sounds like a mouthful, but the recipe uses readily available ingredients and if you follow the instructions, you should have an amazingly moist and fluffy cake with compliments flowing in. Basically, it's a Sinfully Rich Chocolate Cake fit for a King. Which, on one’s birthday, one ought to be. But, even if it’s not your birthday, I know you can find some excuse to make this joy of a cake soon. Because you ARE a king and you deserve it! 😄

Sinfully Rich Dark Chocolate Cake

Ingredients for cake:  
  • 2 cups all purpose flour
  • 1 1/2 cups sugar
  • 3/4 cups dark cocoa powder
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup oil
  • 3 eggs
  • 1 cup buttermilk
  • 1/2 cup strongly brewed coffee
Ingredients for frosting:
  • 2 cups salted butter, melted
  • 1/2 cup cream cheese, room temperature
  • 1 1/2 cups cocoa powder
  • 4 cups powdered sugar
  • 1/2 cup strongly brewed coffee
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt

Recipe:

  • Preheat oven to 350°F. Grease and line two cake pans with parchment paper
  • In a large bowl, whisk together sugar, cocoa powder, flour, baking soda, baking powder, and salt. In a separate bowl, whisk oil, eggs, and buttermilk
  • Pour the wet ingredients into the dry, whisking until no lumps remain. Pour in brewed coffee, mixing until just combined
  • Pour batter into prepared pans and bake for roughly 30 minutes, or until a knife inserted in the center of the cake comes out clean. Cool completely on a wire rack before frosting
  • To make the frosting, place butter and cream cheese in a mixer on high speed for 1 minute, then turn speed to low and add in cocoa powder. Mix until combined, then add in powdered sugar, brewed coffee, vanilla extract, and salt. Cream on high speed for 1 minute, until mixture has lightened slightly and is fluffy
  • Frost cake by placing first cake layer onto a cake stand. Top with a healthy dose of frosting. Spread evenly, then repeat with second layer. Use remaining frosting to frost sides of the cake and to make decorations on top
You can increase the amount of coffee in the cake batter if you want a richer flavour. Also, we love fruit with dark chocolate so I used cherries to decorate the cake, you can try adding some fresh fruit too
